We use short-wave and medium-wave IR to kickstart the Maillard reaction. That’s just a fancy way of saying we’re getting the sugars and amino acids to dance under the heat, which is where all that rich color and flavor actually comes from.
Getting the Heat Right
Here’s the thing: if your power density is too low, you’ve got a problem. Your bread will dry out completely before it ever gets brown. Nobody wants a cracker when they asked for a loaf. We focus on the intensity of the radiant flux. If you want to heat things up fast and deep, short-wave IR is your best bet. But for that crisp, surface-level browning? Medium-wave is the way to go. You’ve got to find the sweet spot between voltage and wattage. A higher wattage gives the dough a bit of a “thermal shock.” It’s what creates that professional “spring” and the exact shade of gold that makes customers keep coming back.
The Gear Inside
We build our elements with high-purity quartz tubes. Why? Because quartz lets the IR radiation slide right through without soaking it up. That means more heat hitting your bread and less heat wasting away inside the lamp. Your ovens are all different, so we don’t do “one size fits all.” We can tweak the lengths and wattage to fit your specific setup. Plus, we offer different reflector coatings to point the heat exactly where it needs to go. A polished aluminum reflector is great because it pushes the energy straight down, so you aren’t wasting electricity heating the ceiling of your oven.
A Few Things to Watch Out For
High-intensity IR puts out a lot of heat. A lot. If your ventilation isn’t up to the task, you’re asking for trouble. Running these at full blast without enough airflow is a quick way to warp your brackets or fry your wiring. To keep things safe, we suggest using a PID controller. It lets you dial the power up and down so you don’t accidentally scorch the crust in those final few seconds of the bake. It’s the difference between a perfect loaf and a burnt one.
