
Fixing the “Hot Top, Cold Bottom” Problem in Bakery Ovens
Anyone who’s spent time with a multi-deck oven knows the frustration. Heat rises. It’s just physics. You end up with a top deck that’s scorching and a bottom deck that can’t seem to get the job done, leaving you with some loaves that are burnt on top and others that are just… pale. We’ve found a way around this by swapping out—or adding to—the usual convection setup with 1000W infrared (IR) emitters. Heating the dough, not the air Here’s the thing about IR: it doesn’t care about the air around it. While traditional ovens rely on blowing hot air (which always finds a way to miss the corners), IR radiation hits the surface of your product directly. It’s a different kind of heat. You aren’t waiting for the oven cavity to warm up; you’re putting energy straight into the dough. This means you can treat every single deck like its own little world. The gear you’ll actually need To make this work, we use 1000W lamps because they hit the target instantly. But you can’t just plug them in and hope for the best. You’ll want a PID controller and a Solid State Relay (SSR). Why? Because these things cycle fast. The second your sensor hits the right temp, the lamp cuts out. It stops that annoying “overshoot” where heavy heating elements keep pumping out heat long after you’ve turned them off. It’s precise. A few things to watch out for It’s not all magic, though. There are a couple of trade-offs. Most of these emitters use quartz glass. It’s great for handling quick temperature swings, but it’s fragile. If your crew tends to be a bit rough with the trays,**put some guards in place.**You don’t want a broken lamp in the middle of a rush. Also, 1000W is a lot of power. If your oven isn’t insulated specifically for this kind of radiant heat, the outside of the oven is going to get hot. Just a heads-up for anyone working close to the chassis. The real win here is the control. You can dial in the top deck for a perfect sear and keep the bottom deck focused on a crisp base, and they won’t fight each other.
